PH Stabilizer
Supercharge your mash. A proprietary blend of food-grade phosphate buffers (similar to brewer’s salts) that will lock in your mash at a pH of 5.2 regardless of the pH of your water. Five Star pH Stabilizer will optimize enzymatic activity, helps clarify your wort and often increases your starting gravity. It is safe for your mash and will not add any flavors to your product. Add 1 tablespoon per 5 gallons of mash. One jar will treat over 48 five-gallon batches.

I don’t find that this product does what it’s supposed to do. I start with reverse osmosis water, and you have to use just about double the amount that the instructions say and, even then, you get a pH of about 6.0 instead of 5.2. In order to get 5.2. If you want 5.2, I think you have to titrate with citric acid and be happy with that.
